Cinnamon Chia Seed Pudding
2 Tb chia seeds
1/2 tsp cinnamon
1/2 cup almond or rice milk (or 1/4 cup yogurt + 1/4 cup water)
1/4 tsp vanilla
pinch of sea salt
1 tsp maple syrup or raw honey (optional)
Mix all ingredients together in a bowl. Let sit 1 hour or overnight, and enjoy!
Try substituting other spices and flavors for the cinnamon. Maybe even add in some raw cacao!
